Coleslaw
My sister-in-law suggested the post be "it's called coleslaw because people from the South cannot pronounce 'cold slaw'." I didn't want to write that because I don't like to make fun of people.
Everyone knows coleslaw is German for finely sliced cabbage...it was originally served warm. Bacon fat was used instead of mayonnaise.

For Perfect Sweet Tea...
Add sugar to the tea while it is still hot. Once desired amount of sugar is added, stir until sugar dissolves. Place pitcher of sweetened tea in refrigerator.
Grilled Sweet Potatoes
Place 2 sweet potatoes on the grill with the skins on. Grill until skins loosen. Cut open and place one pat of butter on each half of the grilled potato. Yams can be substituted if greater sweetness is desired.

How to Make Perfect Iced Tea
Fill 2 Quart pitcher with water. Place 6-8 Tea Bags in water and place pitcher in refrigerator. Let stand overnight. Sweeten with simple syrup, mint or lemon if desired.

When making hash...
When making hash the longer you let it saute in the pan, the crispier and more delicious it will be.
Because there are potatoes in corned beef hash and eggs come with a side of hash browns, ordering corned beef hash means double potatoes!!!

Braised Cabbage
One Sliced Onion
One Small Head of Green Cabbage
2 Strips of Dry Cured Bacon
2 Tablespoons of Cider Vinegar
1 Dash of Celery Salt
2 Teaspoons of Salt (to taste)
1 Teaspoon of Caraway Seeds
Core and halve cabbage. Place cabbage in large bowl with an inch of water. Cover bowl with plastic wrap and microwave for 7 minutes to steam. Slice steamed cabbage and set aside. Fry bacon until crispy and set aside on paper towels. Place sliced onion in bacon grease. Once onions are sweated, add cabbage, vinegar, celery salt. Sprinkle salt over mixture. Simmer on low heat for 30 minutes. Dice bacon and add to pan with caraway seeds. Mix and allow to simmer for 5 minutes. Serve and enjoy.

Peanut Butter Cup Smore
Place a mini peanut butter cup on a graham cracker next to a roaring fire.
Roast marshmallow slowly giving peanut butter cup ample time to melt.
Place roasted marshmallow on top of melty peanut butter cup, using top graham cracker to pull marshmallow off of stick.

Roasted Fennel
Roasted Fennel makes a delicious addition to any meal. Preheat your oven at 450 degrees. Clean your fennel, lets say 4 bunches. Cut off the green stuff on top and place in a hotel pan. Drizzle with olive oil and sprinkle with kosher salt and ground pepper. Place pan with fennel in oven for 40 minutes...Delicious.
