Braised Cabbage

One Sliced Onion
One Small Head of Green Cabbage
2 Strips of Dry Cured Bacon
2 Tablespoons of Cider Vinegar
1 Dash of Celery Salt
2 Teaspoons of Salt (to taste)
1 Teaspoon of Caraway Seeds

Core and halve cabbage. Place cabbage in large bowl with an inch of water. Cover bowl with plastic wrap and microwave for 7 minutes to steam. Slice steamed cabbage and set aside. Fry bacon until crispy and set aside on paper towels. Place sliced onion in bacon grease. Once onions are sweated, add cabbage, vinegar, celery salt. Sprinkle salt over mixture. Simmer on low heat for 30 minutes. Dice bacon and add to pan with caraway seeds. Mix and allow to simmer for 5 minutes. Serve and enjoy.
